Summer is here and it is hot! One of my favorite treats has always been ice cream. It is cold, smooth and satisfying on a hot, humid summer day (or cold winter day when I am dreaming of summer). Sadly, dairy decided it was no longer my friend. Thankfully, I found other frozen delicacies that help satisfy that craving for an icy, delicious treat. Grocery store non-dairy desserts can get spendy, so I have experimented with different homemade versions of “nice” cream. These are similar to a dessert found at a very famous mouse theme park but a lot cheaper! And it is fruit, so a healthy option.
Pineapple Whip
Ingredients:
1 (20 oz) can diced pineapple (drained and then frozen) or same amount of frozen bagged pineapple
1/4 cup almond milk (or non-dairy milk of choice, coconut milk would be fantastic)
1 Tbs lime juice
1 -2 Tbs sweetener of choice (or more depending on sweetness of fruit and preference)
Directions:
Take frozen pineapple chunks out of the freezer for a few minutes prior to using to thaw slightly so they are not a big chunk of pineapple ice. Try to break the pieces up so they blend more easily. Place all ingredients in blender or food processor and blend until a smooth consistency, you may need to stop a few times and scrape down the sides. You can eat right away or freeze for later if you prefer a firmer texture. If you want to get fancy, put mixture in a plastic freezer bag, cut off the corner and swirl into a bowl or cup. You may need to put in the freezer for a few minutes for it to be firm enough to swirl.

4 cups frozen strawberries
1/2 cup almond milk (or non-dairy milk of choice)
1 -2 Tbs sweetener of choice (or more depending on sweetness of fruit and preference)
1 Tbs lemon juice
Pinch of salt
