Ideally, I would post some tips and hints on gardening, but clearly, I’m not even remotely qualified! In fact, I don’t even have any gardening blogs I follow that I could recommend. However, I do have a challenge for you: eat more vegetables. That’s right! As they come into harvest in the weeks to come, try something new. Buy a vegetable you’ve never heard of, experiment on a favorite with a new way to cook it, eat it raw, put it in a smoothie. Vegetables are God’s vitamins.
My favorite way to cook any vegetable is 425 degrees. Carrots, peppers, zucchini, brussel sprouts, cauliflower, broccoli, cabbage….on and on. Toss in olive oil, fresh garlic (or garlic powder if you are in a rush), salt and pepper. Half of an hour at 425, stir halfway. Easy and delicious! Enjoy!
